Our taste buds did a little ditty.....


......and so will yours if you try this recipe.  I don't know if you are familiar with The Pioneer Woman but if you aren't you seriously are living in the dark ages, I'm telling you!  She has a wonderful blog full of all kinds of crazy goodness but my favorite part is her step-by-step recipes and her wit.  I feel like I am sitting in the kitchen with an old friend every time I drop by her blog to catch up on her latest antics in the kitchen, the stories of Marlboro Man or the beautiful photos she takes of anyone and anything who is in her path.  Stop by, you'll be glad you did.

So here's the deelio.....the kids absolutely love when I make brunch so Sunday seemed the perfect day to spoil the little ones (and obviously the big ones) and bring some joy to everyone's taste buds.  It didn't hurt we had 8" of snow on the ground to help give it a comfy homey feeling warm fuzzy feeling.  These will be the memories we all will remember and for me, it's all about the chapter in their books which they will always be able to return to knowing that I did everything I could to make them not only feel special but to let them know how much I love them and the warm fuzzy feeling they will always remember that goes along with our shared brunches and just being able to sit down and enjoy a wonderful meal while we all laugh at the antics of the kiddos.  Those two make our lives so much brighter.....love them so much more than words could ever say.

Cinnamon Bun Pancakes with Maple Butter Icing

 Cinnamon Bun Pancakes

Ingredients:

  • 1-½ cup All-purpose Flour
  • 3 Tablespoons White Sugar
  • ½ teaspoons Salt
  • 4 teaspoons Baking Powder
  • 1 Tablespoon Cinnamon
  • 2 whole Eggs Beaten
  • 1 cup Milk
  • 2 Tablespoons Corn Syrup
  • ¼ cups Butter, Melted
  • 1 Tablespoon Vanilla
Preparation Instructions:

In medium bowl, combine flour, sugar, salt, baking powder and cinnamon with a whisk. Whisk well to make sure everything is combined.
In separate large bowl, beat together eggs, milk, corn syurp, butter and vanilla. Stir in flour mixture.
Heat a lightly oiled griddle or frying pan over medium/low heat. Pour about 1/4 cup batter onto griddle. Brown on both sides.
Serve warm with icing drizzled over the top.

Maple Butter Icing

Ingredients:

  • 1 cup Powdered Sugar
  • ¼ cups Butter, Melted
  • Dash Of Salt
  • 1 Tablespoon Maple Syrup
  • ¼ cups Whole Milk (more If Needed)
 Preparation Instructions:

Whisk all ingredients together until smooth, adding more milk as needed.

Not only are these wonderful the day you make them, but if you have leftovers like we did throwing them in the fridge and eating them cold or warming them and then topping them with the icing is a real treat! You CAN trust me on this!
